Poached Eggs
on Asparagus
- 1 lb (about
20) asparagus spears, trimmed
- 1/2 cup, plus
1 tablespoon european style butter
- 1/4 cup flour
- 3 oz. Boursin
cheese
- 1 cup half-and-half
- 8 eggs

Cook asparagus until
tender, about 3 min. Drain, return to skillet w/ tbl butter. Melt
1/4 cup butter, blend in flour add half-and-half, crumble in Boursin
cheese and keep warm. Poach eggs, remove eggs while yolks are
still soft, about 2-1/2 minutes. |
